Creamy Potato Casserole
Ingredients
6 medium potatoes, peeled and thinly sliced
1 small onion, thinly sliced
2 cups heavy cream
1 cup sour cream
1 cup shredded cheddar cheese
2 cloves garlic, minced
2 tablespoons butter, melted
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon dried thyme (optional)
1/4 cup grated Parmesan cheese (optional, for topping)
Fresh parsley for garnish
Instructions
Preheat your oven to 375°F (190°C).
Grease a glass casserole dish with a little butter.
Arrange the sliced potatoes and onions evenly in the dish.
In a bowl, whisk together:
heavy cream
sour cream
garlic
melted butter
salt
black pepper
paprika
thyme
Stir in half of the cheddar cheese.
Pour this creamy mixture evenly over the potatoes.
Sprinkle the remaining cheddar cheese and Parmesan on top.
Cover with foil and bake for 45 minutes.
Remove foil and bake another 20–25 minutes until golden, bubbly, and fork-tender.
Let rest for 10 minutes, garnish with parsley, and serve warm.
