🥬 WW Cabbage Soup (Low Points, High Volume)
Ingredients:
1 small head green cabbage, chopped
1 onion, diced
2–3 cloves garlic, minced
3 carrots, sliced
2 celery stalks, chopped
1 bell pepper, diced
1 can (400g) diced tomatoes (with juice)
6 cups low-sodium vegetable broth (or chicken broth)
1–2 tbsp tomato paste (optional, for richness)
1 tsp paprika
1/2 tsp dried thyme
1/2 tsp oregano
Salt & pepper to taste
Optional: chili flakes or hot sauce for a kick
Optional protein boost:
1–2 cups cooked shredded chicken
or lean ground turkey (cooked first)
or beans (if you’re okay with slightly higher points)
Instructions:
In a large pot, sauté onion, garlic, carrots, and celery with a splash of water or a little oil for 5–7 minutes until softened.
Add cabbage and cook another 5 minutes until it starts to wilt.
Stir in diced tomatoes, broth, tomato paste, and all seasonings.
Bring to a boil, then reduce heat and simmer for 20–30 minutes until vegetables are tender.
Add your protein (if using) and simmer another 5–10 minutes.
Taste and adjust seasoning.

Tastes even better the next day 👍
Keeps in the fridge up to 5 days or freeze in portions
Add zucchini, spinach, or green beans for more volume
