🍪 Cowboy Cookies
Ingredients:
1 cup (225 g) butter, softened
1 cup brown sugar
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
2 cups rolled oats
1½ cups chocolate chips
1 cup chopped nuts (pecans or walnuts)
1 cup shredded coconut (optional but traditional)
Instructions:
Preheat oven to 180°C (350°F) and line a baking tray.
Cream butter + both sugars until light and fluffy.
Add eggs one at a time, then vanilla. Mix well.
In another bowl, whisk flour, baking soda, baking powder, and salt.
Gradually add dry ingredients to wet mixture.
Stir in oats, chocolate chips, nuts, and coconut.
Scoop dough onto tray (about 2 tbsp each), spacing them apart.
Bake 10–12 minutes until edges are golden.
Let cool slightly—they’ll firm up as they sit.
Tips:
For softer cookies: slightly underbake.
For crispier edges: bake 1–2 minutes longer.
You can skip coconut if you don’t like it.
