🥔 Potato & Bean Casserole
🧾 Ingredients:
4–5 medium potatoes (peeled & thinly sliced)
1 can (400g) beans (baked beans or kidney beans, drained)
1 small onion (chopped)
2 cloves garlic (minced)
1 cup tomato sauce or crushed tomatoes
1/2 cup milk or cream
1 cup shredded cheese (cheddar or any you like)
2 tbsp olive oil or butter
Salt & pepper (to taste)
1 tsp paprika (optional)
1/2 tsp dried herbs (thyme or oregano)
👩‍🍳 Instructions:
Preheat oven to 180°C (350°F).
Cook potatoes:
Boil sliced potatoes in salted water for 5–7 minutes (slightly tender, not fully cooked). Drain.
Make the filling:
Heat oil in a pan.
Sauté onion until soft, then add garlic.
Stir in beans, tomato sauce, salt, pepper, and spices. Simmer 5 minutes.
Assemble:
Grease a baking dish.
Layer half the potatoes on the bottom.
Add the bean mixture.
Top with remaining potatoes.
Pour milk/cream over everything.
Sprinkle cheese on top.
Bake:
Cover with foil and bake for 30 minutes.
Remove foil and bake another 15–20 minutes until golden and bubbly.
😋 Tips:
Add cooked minced meat if you want extra protein.
A pinch of chili flakes gives it a nice kick.
Let it rest 10 minutes before serving—it sets better.
