Addictive Slow Cooker Spring Potluck Chicken
This creamy, savory slow cooker meal is the kind of dish people keep going back for at potlucks. Easy to prep and perfect over rice, pasta, or mashed potatoes.
Ingredients
4 boneless skinless chicken breasts (or thighs)
1 packet ranch seasoning mix
1 can cream of chicken soup
1 block cream cheese (8 oz / about 225 g)
1 cup chicken broth
1½ cups shredded cheddar cheese
6 slices cooked bacon, chopped
2 cups frozen broccoli florets
Optional: chopped green onions for topping
Instructions
Place chicken in the slow cooker.
Sprinkle ranch seasoning over the chicken.
Add cream of chicken soup and chicken broth.
Place the cream cheese on top.
Cover and cook:
LOW for 6–7 hours, or
HIGH for 3–4 hours.
Shred the chicken with two forks.
Stir in cheddar cheese, bacon, and broccoli.
Cook another 20–30 minutes until broccoli is tender and cheese is melted.
