A cozy, nourishing twist on classic French onion soup made with anti-inflammatory ingredients like onions, garlic, turmeric, olive oil, and bone broth.
Ingredients
4 large yellow onions, thinly sliced
2 tbsp olive oil
2 tbsp grass-fed butter or extra olive oil
4 garlic cloves, minced
1 tsp turmeric
1/2 tsp black pepper
1 tsp dried thyme
1 tbsp balsamic vinegar
6 cups low-sodium beef bone broth or vegetable broth
1 bay leaf
Salt to taste

Whole grain or sourdough bread, toasted
Gruyère or mozzarella cheese
Fresh parsley
Instructions
Caramelize the onions
Heat olive oil and butter in a large pot over medium-low heat. Add onions and cook slowly for 30–40 minutes, stirring often, until deeply golden and sweet.
Add anti-inflammatory flavors
Stir in garlic, turmeric, black pepper, and thyme. Cook for 1 minute until fragrant.
Deglaze the pot
Add balsamic vinegar and scrape up any browned bits from the bottom.
Simmer
