Slow Cooker Corned Beef & Potato Casserole
A cozy, old-school comfort meal made with canned corned beef and potatoes — easy, filling, and perfect for busy nights.
Ingredients
2 cans diced potatoes, drained
1 can corned beef
1 can cream of mushroom soup
1 cup shredded cheddar cheese
1 small onion, diced
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 cup milk
Optional: chopped parsley or green onions for garnish
Instructions
Spray the slow cooker lightly with cooking spray.
Add the drained potatoes to the bottom of the slow cooker.
Break up the canned corned beef with a fork and spread it over the potatoes.
In a bowl, mix:
cream of mushroom soup
milk
onion
garlic powder
black pepper
Pour the mixture evenly over the potatoes and corned beef.
Sprinkle shredded cheddar cheese on top.
Cover and cook:
LOW for 4–5 hours
or
HIGH for 2–3 hours
Stir gently before serving and garnish if desired.
