Creamy Chicken & Rice Casserole
Ingredients
2 cups cooked chicken, shredded
2 cups cooked rice
1 can cream of chicken soup
1/2 cup sour cream
1/2 cup milk
1 cup shredded cheddar cheese
1 small onion, diced
1 cup frozen peas or mixed vegetables
1 tsp garlic powder
Salt and pepper to taste
1 cup crushed crackers or breadcrumbs
2 tbsp melted butter

Add a spoonful of mayonnaise for extra creaminess
Mix in a little paprika or onion powder
Use rotisserie chicken for deeper flavor
Sprinkle extra cheese on top during the last 10 minutes
Instructions
Preheat oven to 375°F (190°C).
In a large bowl, combine soup, sour cream, milk, garlic powder, salt, and pepper.
Stir in chicken, rice, onion, vegetables, and cheese.
Pour mixture into a greased baking dish.
Mix crushed crackers with melted butter and sprinkle over the top.
Bake for 30–35 minutes until hot and bubbly.
Let sit 5 minutes before serving.
