🥘 Budget Dump-and-Go “Family Dinner” Casserole
🛒 Ingredients (very cheap staples)
1 can beans (kidney, pinto, or white beans)
1 can diced tomatoes (or tomato sauce)
2–3 potatoes (or 1 cup uncooked rice if you prefer)
1 onion (optional but adds flavor)
1–2 cloves garlic (or garlic powder)
1 tsp salt
1 tsp paprika (or chili powder)
2 cups water
Optional: a little oil or any leftover meat (sausage, ground beef, etc.)
👨🍳 How to make it (dump & go style)
Chop the potatoes into small cubes (so they cook faster).
Dump everything into a pot or slow cooker:
beans
tomatoes
potatoes (or rice)
onion + garlic
spices
water
Stir once, then cover.
Cook:
Slow cooker: 6–8 hours low OR 3–4 hours high
Stovetop: 30–40 minutes on low simmer, stirring occasionally
Taste and adjust salt at the end.
