Caramelized Onion Potatoes
These creamy, savory potatoes taste like a steakhouse side dish thanks to rich caramelized onions and melted cheese.
Ingredients
2 lbs (900 g) potatoes, thinly sliced
2 large onions, thinly sliced
3 tbsp butter
1 tbsp olive oil
1 cup shredded Gruyère or mozzarella cheese
1/2 cup grated Parmesan
1 cup heavy cream or half-and-half
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1/2 tsp thyme (optional)
Instructions
Preheat oven to 375°F (190°C). Grease a casserole dish.
In a skillet, heat butter and olive oil over medium-low heat.
Add onions and cook slowly for 25–30 minutes, stirring often, until deeply golden and caramelized.
Stir in garlic and cook 1 minute more.
Layer half the potatoes in the baking dish. Season lightly with salt and pepper.
Spread half the onions over the potatoes and sprinkle with some cheese.
Repeat layers with remaining potatoes, onions, and cheese.
Pour cream evenly over the top and finish with Parmesan.
Cover with foil and bake 45 minutes.
Remove foil and bake another 20–25 minutes until golden and bubbly.
