These no-bake keto bars are creamy, chewy, lightly sweet, and packed with protein — perfect for a quick snack or post-workout bite.
Ingredients
1 cup unsweetened shredded coconut
1 cup vanilla or unflavored protein powder
1/2 cup natural almond butter (or peanut butter)
1/4 cup coconut oil, melted
1/4 cup unsweetened coconut milk
2–3 tbsp keto sweetener (erythritol or monk fruit)
1 tsp vanilla extract
Pinch of salt
Optional Topping
Sugar-free dark chocolate drizzle
Extra shredded coconut
Instructions
In a large bowl, mix together the shredded coconut, protein powder, sweetener, and salt.
Add almond butter, melted coconut oil, coconut milk, and vanilla extract.
Stir until a thick dough forms. If too dry, add a splash of coconut milk.
Press mixture firmly into a parchment-lined loaf pan or small dish.
Sprinkle extra coconut on top or drizzle with melted sugar-free chocolate if desired.
Refrigerate for 1–2 hours until firm.
Slice into bars and enjoy!
