Pork Chops with Potatoes in a Baking Dish
Ingredients
4 bone-in or boneless pork chops
4 medium potatoes, thinly sliced
1 small onion, sliced
3 tbsp olive oil or melted butter
3 cloves garlic, minced
1 tsp paprika
1 tsp Italian seasoning
Salt and black pepper, to taste
1 cup chicken broth
1/2 cup shredded cheddar or parmesan cheese (optional)
Fresh parsley for garnish
Instructions
Preheat oven to 400°F (200°C).
Grease a 9×13-inch baking dish.
Layer the sliced potatoes and onions in the bottom of the dish.
Drizzle with half of the olive oil and season with salt, pepper, paprika, and Italian seasoning.
Rub pork chops with remaining oil, garlic, salt, pepper, and a little extra paprika.
Place pork chops on top of the potatoes.
Pour chicken broth around the sides of the dish to keep everything moist.
Cover with foil and bake for 35 minutes.
Remove foil, sprinkle cheese on top if using, and bake uncovered for another 15–20 minutes, until pork chops are golden and potatoes are tender.
Garnish with parsley and serve hot.
