Chocolate Peanut Butter Balls (Buckeyes)
Ingredients
1 cup creamy peanut butter
5 tbsp butter, softened
2 cups powdered sugar
1 tsp vanilla extract
2 cups semi-sweet chocolate chips
1 tbsp coconut oil or shortening
Instructions
In a bowl, mix peanut butter, butter, vanilla, and powdered sugar until a soft dough forms.
Roll into small balls and place on a parchment-lined tray.
Freeze for 20–30 minutes.
Melt chocolate chips with coconut oil until smooth.
Dip each ball into chocolate using a toothpick, leaving a small circle on top if you want the classic “buckeye” look.
Refrigerate until set.
