☁️ Cloud Cake Recipe (Soft & Fluffy)
🧾 Ingredients
4 large eggs (separated)
120 g cream cheese (or soft mascarpone)
50 ml milk
40 g all-purpose flour
30 g cornstarch
80 g sugar (split: 40 g + 40 g)
1 tsp vanilla extract
Pinch of salt
Optional: powdered sugar for topping
👩🍳 Instructions
Prepare oven
Preheat to 150°C
Line a small cake pan (or use parchment in a springform pan)
Make yolk base
Mix egg yolks, cream cheese, milk, and vanilla until smooth
Sift in flour + cornstarch
Stir until no lumps remain
Whip egg whites (key step)
Add a pinch of salt
Whip until foamy
Gradually add half the sugar (40 g)
Continue whipping until soft-to-medium peaks form (fluffy but not dry)
Combine
Gently fold egg whites into yolk mixture in 2–3 batches
Don’t overmix (this keeps it “cloud-like”)
Bake (water bath recommended)
Place pan in a larger tray with hot water
Bake at 150°C for 50–60 minutes
Turn off oven and leave cake inside 10–15 minutes
Serve
Cool slightly, dust with powdered sugar
Eat warm or chilled

Don’t rush whipping egg whites—this is what makes it fluffy
Fold gently, not vigorously
Water bath prevents cracking and keeps it soft
