Ingredients
4 large eggs
2 tablespoons milk or heavy cream
1 tablespoon butter
1 tablespoon cream cheese (the secret hack!)
Salt, to taste
Black pepper, to taste
Optional: chopped chives or shredded cheese
Instructions
Crack the eggs into a bowl.
Add milk or cream and whisk very well until the mixture is light and frothy.
Stir in the cream cheese until mostly blended. Small lumps are fine.
Heat a nonstick skillet over low heat and melt the butter.
Pour in the eggs and let them sit for about 15 seconds.
Gently stir with a spatula, slowly pushing the eggs from the edges toward the center.
Keep cooking on low, stirring gently, until the eggs are soft, fluffy, and slightly glossy.
Remove from heat while they still look a little creamy — they’ll finish cooking from the heat of the pan.
Season with salt and pepper and serve immediately.
