Walking Taco Casserole
A fun, cheesy dinner that tastes just like walking tacos — but baked into one easy casserole!
Ingredients
1 lb (450 g) ground beef
1 small onion, diced
1 packet taco seasoning
2/3 cup water
1 can (15 oz) black beans or pinto beans, drained
1 can (15 oz) corn, drained
1 can (10 oz) diced tomatoes with green chilies
3 cups crushed tortilla chips or corn chips
2 cups shredded cheddar or Mexican blend cheese
1 cup salsa
Optional toppings:
shredded lettuce
diced tomatoes
sour cream
sliced jalapeños
avocado
green onions
Instructions
Preheat oven to 375°F (190°C).
Grease a 9×13-inch baking dish.
In a skillet over medium heat, cook the ground beef and onion until beef is browned. Drain excess grease.
Stir in taco seasoning and water. Simmer for 2–3 minutes.
Add beans, corn, diced tomatoes, and salsa. Mix well and heat through.
Spread half of the crushed chips into the baking dish.
Spoon the beef mixture over the chips.
Sprinkle with 1½ cups cheese and top with remaining chips.
Finish with the rest of the cheese.
Bake uncovered for 15–20 minutes, until hot and bubbly and cheese is melted.
Let sit 5 minutes before serving. Add your favorite taco toppings.
Tips
Use spicy nacho chips for extra flavor.
Add cream cheese or queso for a creamier casserole.
Ground turkey or chicken works great too.
For extra crunch, add a handful of fresh chips on top after baking.
