3-Ingredient Filling Breakfast

Ingredients
2 eggs
1 medium potato, grated
1/2 cup shredded cheese (cheddar or mozzarella work great)

Salt and black pepper
Butter or oil for the pan
Instructions
Grate the potato and squeeze out extra moisture with a clean towel or paper towel.
In a bowl, mix the grated potato, eggs, and cheese together.
Season lightly with salt and pepper if you like.
Heat a lightly greased skillet over medium heat.
Pour the mixture into the pan and flatten slightly.
Cook for 4–5 minutes per side until golden brown and cooked through.
