Voodoo Ranch Smash Burger Queso
A rich, cheesy dip loaded with seasoned beef, creamy queso, smoky spices, and tangy ranch flavor. Perfect for game night, parties, or dipping tortilla chips, fries, or toasted bread.
Ingredients
For the Smash Burger Beef
1 lb (450 g) ground beef
Salt and black pepper, to taste
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 tbsp Worcestershire sauce
For the Queso
2 tbsp butter
2 tbsp flour
1½ cups milk
2 cups shredded cheddar cheese
1 cup Monterey Jack cheese
4 oz cream cheese
1 can diced tomatoes with green chilies (drained)
2 tbsp ranch dressing
1 tsp hot sauce (optional)
Toppings
Pickles, diced
Crispy bacon bits
Green onions or chives
Jalapeños
Extra ranch drizzle
Instructions
Cook the beef
Heat a skillet over medium-high heat. Add the ground beef and press it flat like a smash burger. Let it brown deeply before breaking it apart. Season with salt, pepper, garlic powder, onion powder, smoked paprika, and Worcestershire sauce. Cook until browned and slightly crispy.
Make the queso base
In another pan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Slowly pour in milk while whisking until smooth.
Add the cheese
Lower heat and stir in cream cheese until melted. Add cheddar and Monterey Jack a little at a time until smooth and creamy.
Flavor it up
Stir in diced tomatoes, ranch dressing, and hot sauce if using.
Combine
Fold the seasoned smash burger beef into the queso.
Serve hot
Top with pickles, bacon bits, jalapeños, green onions, and a drizzle of ranch.
