Ingredients
Chicken
800 g chicken thighs, drumsticks, or wings
1 cup (240 ml) buttermilk (or milk + 1 tbsp lemon juice)
1 egg
Seasoned coating
1½ cups (190 g) all-purpose flour
½ cup (60 g) cornstarch (for extra crispiness)
1 tbsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
1 tsp salt
1 tsp dried oregano
½ tsp thyme
½ tsp cayenne (optional)
For cooking
Oil spray
Instructions
Marinate
Mix buttermilk and egg.
Add chicken and marinate for 30 minutes (or overnight for more flavor).
Prepare coating
Combine flour, cornstarch, and all spices in a large bowl.
Coat chicken
Remove chicken from marinade.
Press each piece firmly into the flour mixture.
For extra crunch: dip back into marinade briefly, then coat again.
Air fry
Preheat air fryer to 200°C for 3 minutes.
Spray basket lightly with oil.
Arrange chicken in one layer and spray tops with oil.
Cook 10 minutes, flip, spray again, then cook 10–15 more minutes until golden and cooked through.
