Ingredients
- 1 head green cabbage, chopped
- 1 carrot, grated
- 2 green bell peppers, diced
- 1 small onion, thinly sliced
- 2 tsp salt
- ¾ cup apple cider vinegar
- ½ cup granulated sugar
- ¼ cup water
- 1 tsp celery seed
- 1 tsp ground mustard
- Salt and black pepper, to taste
Instructions
- Chop the cabbage into bite-sized pieces, grate the carrot, dice the bell peppers, and thinly slice the onion.
- In a large mixing bowl, combine the cabbage, carrot, bell peppers, onion, and 2 teaspoons of salt. Toss well and let sit for about 30 minutes.
- In a small saucepan, combine the apple cider vinegar, sugar, water, celery seed, and ground mustard. Bring to a gentle simmer, stirring until the sugar dissolves completely.
- Remove the dressing from the heat and let it cool slightly.
- Pour the dressing over the vegetables and toss until everything is evenly coated.
- Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to develop.
- Toss again before serving. Enjoy chilled as a side dish with grilled meats, burgers, fried chicken, or sandwiches.
