The Story Behind the Image
If you have a surplus of zucchini and carrots in your fridge, this is the dish to make. The top image shows the simple “mise en place” (prep): grated carrot, grated potato or zucchini, fresh herbs, and raw eggs. The bottom image shows the glorious result: golden-brown, pan-fried logs that are crispy on the outside, soft on the inside, and packed with savory flavor. These are perfect for a healthy breakfast, a side dish, or a guilt-free snack.
Ingredients
For the Vegetable Mix:
· 2 medium Zucchini (or 1 large zucchini) – about 2 cups when grated
· 1 medium Carrot – about 1 cup when grated
· 1 medium Potato (optional, but recommended for structure) – about 1 cup when grated
· 3 large Eggs (as seen in the photo)
· 3-4 Green Onions (scallions), finely chopped
· 2 cloves Garlic, minced (optional, but adds great flavor)
· Salt (about 1 teaspoon, or to taste)
· Black Pepper (½ teaspoon)
· Optional seasonings: ½ teaspoon paprika, ½ teaspoon onion powder, or a dash of chili flakes for heat.
For Cooking:
· 2 tablespoons Cooking Oil (Avocado oil, olive oil, or vegetable oil)
· Grated Cheese (Optional: Parmesan or Mozzarella works well to help bind it and add flavor, but the eggs alone will work).
Step-by-Step Instructions
Step 1: Prepare the Vegetables
Wash and peel the carrot and potato. Grate the zucchini, carrot, and potato using the large holes of a box grater or a food processor.
Pro Tip: Zucchini holds a lot of water. Place the grated zucchini in a clean kitchen towel, wrap it up, and squeeze firmly over the sink to remove as much liquid as possible. If you skip this step, the mixture will be watery and won’t hold its shape.
Step 2: Mix the Batter
In a large bowl, combine the squeezed zucchini, grated carrot, and grated potato. Add the chopped green onions, minced garlic, salt, pepper, and your optional spices. Crack the 3 eggs directly into the center of the mixture.
Step 3: Combine and Shape
Use a fork (just like in the photo) to mix everything thoroughly until the eggs bind all the vegetables together into a sticky, thick paste. The mixture should be wet enough to hold together when squeezed, but not dripping liquid.
Take about a handful of the mixture and shape it into a log (cylindrical shape) in your palms. Press firmly to ensure it holds together. Repeat until all the mixture is used. Depending on size, this makes about 6-8 rolls.
Step 4: Pan-Fry to Golden Perfection
Heat a large non-stick or cast-iron skillet over medium heat. Add the cooking oil and let it heat up.
Place the vegetable rolls into the pan, leaving space between each so they don’t steam.
Cook for about 4-5 minutes per side, turning occasionally with tongs, until all sides are deep golden brown and crispy. The mixture should be cooked all the way through (the eggs will be firm).
Step 5: Serve
Remove them from the pan and drain on a paper towel to absorb excess oil. Let them rest for 2 minutes before eating.
How to Serve
· As a Breakfast: Serve alongside a fried egg or a side of avocado.
· As a Snack: Dip them in sour cream, Greek yogurt, sweet chili sauce, or your favorite dipping sauce (ketchup or sriracha mayo).
· As a Side: Perfect next to a grilled steak, chicken breast, or a fresh green salad.
Chef’s Tips for Success:
- The “Salt and Sweat” Trick: If you have the time, after grating the zucchini, sprinkle it with a pinch of salt, let it sit for 10 minutes, and then squeeze the water out. This extracts even more liquid and makes the fritters extra crispy.
- Don’t overmix: Mix just until the eggs are distributed. Overmixing can make the texture tough.
- Oven Alternative: If you don’t want to fry them, you can place them on a parchment-lined baking sheet, brush them with oil, and bake at 200°C (400°F) for about 20 minutes, flipping halfway through.
