🧁 Savory Egg Muffins (Cheese, Veggie & Ham)
🥚 Ingredients (makes ~12 muffins)
6 large eggs
1 cup milk (or cream for richer taste)
1 cup shredded cheese (cheddar or mozzarella)
½ cup diced ham (or cooked chicken/sausage)
½ cup chopped vegetables (bell peppers, onions, spinach, etc.)
2–3 tbsp chopped fresh herbs (parsley or chives)
Salt and black pepper to taste
Optional: pinch of paprika or garlic powder
👩🍳 Instructions
Preheat oven to 180°C (350°F).
Prepare muffin tin: grease or line with paper cups.
In a bowl, whisk eggs and milk until smooth.
Add salt, pepper, and spices.
Evenly distribute ham, veggies, and cheese into each muffin cup.
Pour the egg mixture over the fillings (about ¾ full).
Sprinkle herbs on top.
Bake for 18–22 minutes, until set and lightly golden.
Let cool for a few minutes, then remove and serve.

Swap meat for mushrooms or more veggies for a vegetarian version
Add a little chili for heat 🌶️
Store in the fridge up to 3 days; reheat quickly in a microwave
