Ingredients
For the blackberry filling
4 cups fresh or frozen blackberries
3/4 cup sugar
1 tablespoon lemon juice
1 tablespoon cornstarch
1 teaspoon vanilla extract
For the cobbler topping
1 cup all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk
1/2 cup (1 stick) unsalted butter, melted
Instructions
Preheat your oven to 180°C (350°F).
In a bowl, mix blackberries, sugar, lemon juice, cornstarch, and vanilla extract. Set aside.
Pour the melted butter into a 9×13-inch baking dish.
In another bowl, whisk together flour, sugar, baking powder, and salt.
Stir in the milk until just combined. Do not overmix.
Pour the batter evenly over the melted butter. Do not stir.
Spoon the blackberry mixture evenly over the batter. Again, do not stir.
Bake for 45–50 minutes, or until golden brown and bubbly.
Let cool slightly before serving.
Serving Idea
Serve warm with vanilla ice cream or whipped cream for the best dessert experience 🍨
