A simple, crispy, old-school comfort sandwich that’s quick and delicious!
Ingredients
4 slices thick-cut bologna
4 slices bread (white bread or sandwich bread)
2 tablespoons butter (or mayonnaise for spreading)
2 slices cheddar cheese (optional)
2 tablespoons mustard
2 tablespoons mayonnaise
4 pickle slices (optional)
1 small onion, thinly sliced (optional)
Instructions
Heat a skillet over medium heat.
Cut a small β€œX” in the center of each bologna slice (this keeps it from curling up while frying).
Add bologna slices to the dry skillet and fry for 2–3 minutes per side until browned and slightly crispy.
Remove bologna and set aside.
Butter one side of each bread slice.
Place bread butter-side down in the skillet and toast lightly.
Add cheese on top of the hot bread if using, so it melts slightly.
Spread mustard and mayonnaise on the other bread slices.
Assemble:
Toasted bread
Fried bologna
Pickles
Onions (optional)
Top bread slice
