Ingredients
2 eggs
200 g cottage cheese or cream cheese
100 g shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
1 teaspoon baking powder
1/2 teaspoon garlic powder (optional)
1/2 teaspoon dried oregano or Italian herbs
Pinch of salt
Chopped parsley (optional)
Instructions
Preheat your oven to 180°C (350°F).
Line a baking tray or muffin tin with parchment paper.
In a bowl, whisk the eggs well.
Add cottage cheese (or cream cheese), mozzarella, Parmesan, baking powder, herbs, garlic powder, and salt.
Mix until smooth and well combined.
Spoon small portions onto the tray or into muffin cups.
Bake for 20–25 minutes until golden and firm.
Let cool slightly before serving.
