High-Protein Vegetable Casserole Recipe 🥦🧀🍳
Ingredients:
2 cups broccoli florets
1 cup cauliflower florets
1 zucchini, sliced
1 red bell pepper, chopped
1 small onion, diced
2 cups cooked shredded chicken (or turkey)
6 eggs
1 cup cottage cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup milk
2 cloves garlic, minced
1 tsp Italian seasoning
1/2 tsp paprika
Salt and black pepper to taste
1 tbsp olive oil
Instructions:
Preheat oven to 190°C (375°F). Grease a baking dish.
In a pan, heat olive oil and sauté onion, garlic, zucchini, and bell pepper for 3–4 minutes.
Add broccoli and cauliflower and cook for another 2–3 minutes until slightly tender.
Spread vegetables and shredded chicken evenly in the baking dish.
In a bowl, whisk together eggs, cottage cheese, milk, Italian seasoning, paprika, salt, and pepper.
Pour the egg mixture over the vegetables and chicken.
Top with mozzarella and Parmesan cheese.
Bake for 30–35 minutes until golden and set.
Let rest for 5 minutes before slicing and serving.
Optional:
Add spinach, mushrooms, or cooked turkey bacon for extra flavor.
