Bacon Pea Salad
A creamy, crunchy side dish packed with sweet peas, crispy bacon, cheddar cheese, and a tangy dressing.
Ingredients
4 cups frozen peas, thawed and drained
8 slices bacon, cooked crispy and crumbled
1 cup cheddar cheese, cubed or shredded
1/2 cup red onion, finely diced
1/2 cup celery, chopped
1/2 cup mayonnaise
2 tablespoons sour cream or Greek yogurt
1 tablespoon apple cider vinegar
1 teaspoon sugar (optional)
Salt and black pepper to taste
Instructions
Cook the bacon until crispy, then crumble and set aside.
In a large bowl, combine peas, cheddar cheese, red onion, celery, and most of the bacon.
In a small bowl, whisk together mayonnaise, sour cream, vinegar, sugar, salt, and pepper.
Pour the dressing over the salad and mix gently until coated.
Chill for at least 30 minutes before serving.
Top with the remaining bacon just before serving for extra crunch.
