Magic Tomato Salad with Fresh Herbs & Creamy Feta
A bright, juicy salad packed with fresh herbs, creamy feta, and a simple homemade dressing. Perfect with grilled chicken, bread, or as a light lunch.
Ingredients
4 cups ripe tomatoes, chopped or sliced
(mix cherry tomatoes and large tomatoes if you like)
1 small cucumber, sliced
1/4 small red onion, thinly sliced
1/2 cup crumbled feta cheese
2 tbsp fresh parsley, chopped
2 tbsp fresh basil, chopped
1 tbsp fresh dill or mint, chopped (optional)
Dressing
3 tbsp olive oil
1 tbsp lemon juice or red wine vinegar
1 garlic clove, minced
1 tsp honey
Salt and black pepper, to taste
Instructions
Add tomatoes, cucumber, and red onion to a large bowl.
In a small bowl, whisk together olive oil, lemon juice, garlic, honey, salt, and pepper.
Pour the dressing over the vegetables and toss gently.
Sprinkle feta and fresh herbs on top.
Let the salad sit for 10 minutes before serving so the flavors blend together.
