Creamy Garlic Mushroom Rice
A cozy one-pan mushroom rice dish that works as a main meal or side dish.
Ingredients
2 cups mushrooms, sliced
1 cup long-grain rice
2 tbsp butter or olive oil
3 cloves garlic, minced
1 small onion, diced
2 cups chicken or vegetable broth
1/2 cup milk or cream
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme (optional)
1/4 cup grated Parmesan (optional)
Fresh parsley for garnish
Instructions
Heat butter or oil in a large skillet over medium heat.
Add onions and cook for 2–3 minutes until soft.
Stir in mushrooms and cook until browned and tender, about 5–7 minutes.
Add garlic and cook for 30 seconds.
Stir in uncooked rice and cook for 1 minute.
Pour in broth, salt, pepper, and thyme.
Bring to a boil, then reduce heat to low and cover.
Simmer for 15–18 minutes until rice is tender.
Stir in milk or cream and Parmesan if using.
Garnish with parsley and serve warm.
