🥦 Light Vegetable Casserole (easy & healthy)
Ingredients:
1 zucchini (sliced)
1 carrot (sliced thin)
1 bell pepper (any color, chopped)
1 small onion (chopped)
1 cup broccoli florets
2 tomatoes (chopped) or 1 cup tomato sauce
2 eggs (optional, for binding)
2–3 tablespoons olive oil (or less if you want it lighter)
1 garlic clove (minced)
Salt, pepper, paprika, oregano (to taste)
Optional add-ins:
Mushrooms, spinach, cauliflower, peas
A small handful of grated cheese on top
Instructions:
Heat oven to 180°C (350°F).
Lightly sauté onion and garlic in a small pan with a little olive oil (or skip sautéing for an even lighter version).
In a large bowl, mix all vegetables with tomato, spices, and olive oil.
If using eggs, whisk them and mix in (this helps everything stick together).
Pour into a baking dish and spread evenly.
Bake for 30–40 minutes, until vegetables are tender and lightly browned on top.
Tips to keep it lighter:
Use minimal oil or spray oil
Load up on non-starchy vegetables (zucchini, broccoli, spinach)
Add protein like eggs or beans so it keeps you full longer
