Chicken Parmesan Grilled Cheese Sandwich
Ingredients (Makes 2 sandwiches)
4 slices thick bread (sourdough or Italian bread works best)
2 cooked chicken breasts, shredded or sliced
1 cup marinara sauce
1 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
2 tbsp butter, softened
1 tsp garlic powder
1 tsp Italian seasoning
Optional: fresh basil or parsley
Instructions
Prepare the filling
In a bowl, mix the cooked chicken with about 1/2 cup marinara sauce.
Butter the bread
Mix softened butter with garlic powder and Italian seasoning.
Spread on one side of each bread slice.
Assemble sandwiches
Place bread butter-side down.
Add mozzarella cheese, chicken mixture, parmesan cheese, and a little extra marinara.
Top with more mozzarella, then place second bread slice on top (butter-side up).
Cook
Heat skillet over medium-low heat.
Grill sandwiches 3–5 minutes per side until golden brown and crispy.
Cover pan briefly to help cheese melt.
Serve
Slice and serve hot with extra marinara for dipping.
Tips
Use rotisserie chicken for a quicker version.
Add pepperoni for extra flavor.
Air fryer option: cook at 190°C (375°F) for about 6–8 minutes, flipping halfway.
