Prime Rib Roast Recipe 🥩
My first thought? “That crust better be loaded with garlic butter and herbs.” 😄
Ingredients
1 prime rib roast (4–6 lbs / 2–3 kg)
2 tbsp olive oil
4 tbsp softened butter
6 garlic cloves, minced
2 tsp salt
1½ tsp black pepper
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tsp onion powder
Instructions
Bring to room temp
Let the prime rib sit out for about 1–2 hours before cooking.
Season the roast
Mix butter, garlic, rosemary, thyme, salt, pepper, onion powder, and olive oil. Rub all over the meat.
Roast hot first
Preheat oven to 500°F (260°C). Roast for 15 minutes to build a crust.
Lower the heat
Reduce oven to 325°F (165°C) and continue cooking:
Rare: 120–125°F (49–52°C)
Medium-rare: 130–135°F (54–57°C)
Medium: 140–145°F (60–63°C)
Usually about 10–12 minutes per pound after lowering the heat.
Rest the meat
Remove from oven and rest 20–30 minutes before slicing.
Optional Au Jus
2 cups beef broth
Pan drippings
1 tbsp flour (optional for thicker sauce)
Simmer together for 5–10 minutes and serve alongside the sliced prime rib.
