Amish Coleslaw

Ingredients

  • 1 head green cabbage, chopped
  • 1 carrot, grated
  • 2 green bell peppers, diced
  • 1 small onion, thinly sliced
  • 2 tsp salt
  • ¾ cup apple cider vinegar
  • ½ cup granulated sugar
  • ¼ cup water
  • 1 tsp celery seed
  • 1 tsp ground mustard
  • Salt and black pepper, to taste

Instructions

  1. Chop the cabbage into bite-sized pieces, grate the carrot, dice the bell peppers, and thinly slice the onion.
  2. In a large mixing bowl, combine the cabbage, carrot, bell peppers, onion, and 2 teaspoons of salt. Toss well and let sit for about 30 minutes.
  3. In a small saucepan, combine the apple cider vinegar, sugar, water, celery seed, and ground mustard. Bring to a gentle simmer, stirring until the sugar dissolves completely.
  4. Remove the dressing from the heat and let it cool slightly.
  5. Pour the dressing over the vegetables and toss until everything is evenly coated.
  6. Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to develop.
  7. Toss again before serving. Enjoy chilled as a side dish with grilled meats, burgers, fried chicken, or sandwiches.
