Ingredients
8 slices thick bread (brioche or Texas toast works best)
8 oz (225 g) cream cheese, softened
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 cup fresh blueberries
4 large eggs
1 cup milk
1 teaspoon cinnamon
1 tablespoon butter (for cooking)
Optional Toppings
Maple syrup
Extra blueberries
Powdered sugar
Whipped cream
Instructions
In a bowl, mix the cream cheese, powdered sugar, and vanilla until smooth.
Spread the cream cheese mixture onto 4 slices of bread.
Sprinkle blueberries evenly over the cream cheese layer.
Top with the remaining bread slices to make sandwiches.
In another bowl, whisk together eggs, milk, and cinnamon.
Dip each sandwich into the egg mixture, coating both sides well.
Heat butter in a skillet over medium heat.
Cook each sandwich for 3–4 minutes per side until golden brown and cooked through.
Slice in half and serve warm with maple syrup, powdered sugar, and extra blueberries.
