Slow Cooker Pork Chops and Sweet Potatoes
Ingredients
4 boneless or bone-in pork chops
2 large sweet potatoes, peeled and sliced into thick rounds
1 small onion, sliced
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup chicken broth
2 tablespoons brown sugar (optional, for a sweeter flavor)
1 tablespoon butter
Instructions
Lightly grease your slow cooker with cooking spray or a little oil.
Place the sliced sweet potatoes and onions in the bottom of the slow cooker.
Season the pork chops with garlic powder, paprika, thyme, salt, and black pepper.
Heat olive oil in a skillet over medium-high heat and sear the pork chops for 2 minutes per side (optional, but adds flavor).
Place the pork chops on top of the sweet potatoes.
Pour chicken broth around the sides. Sprinkle brown sugar over the sweet potatoes if using.
Add small pieces of butter on top.
Cover and cook:
LOW for 6–7 hours
or HIGH for 3–4 hours
Serve warm with the juices spooned over the top.
Tip
Add a little cinnamon for extra cozy flavor with the sweet potatoes!
