BBQ Crowd-Pleasing Creamy Bacon Ranch Pasta Salad
Ingredients
12 oz (340 g) pasta (rotini or bowtie works best)
8 slices bacon, cooked crispy and crumbled
1 cup cheddar cheese, cubed or shredded
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red onion, finely chopped
1/2 cup frozen peas (thawed)
1/2 cup mayonnaise
1/2 cup sour cream
1 packet ranch seasoning mix
1 tablespoon lemon juice
Salt and black pepper, to taste
2 tablespoons chopped parsley (optional)
Instructions
Cook pasta according to package directions until just tender. Drain and rinse with cold water to cool.
In a large bowl, combine cooled pasta, bacon, cheese, tomatoes, cucumber, red onion, and peas.
In a separate bowl, whisk together mayonnaise, sour cream, ranch seasoning, and lemon juice until smooth.
Pour dressing over the pasta mixture and toss until everything is well coated.
Season with salt and black pepper to taste.
Chill in the fridge for at least 1 hour before serving.
Garnish with parsley and extra bacon before serving.
