Prime Rib Roast Recipe
Ingredients
1 prime rib roast (4–6 lbs / 2–3 kg)
2 tablespoons olive oil
4 cloves garlic, minced
2 teaspoons salt
2 teaspoons black pepper
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 teaspoon onion powder
1 teaspoon paprika (optional)
2 tablespoons butter
Instructions
Bring to room temperature
Take the prime rib out of the fridge 1–2 hours before cooking.
Prepare seasoning
Mix olive oil, garlic, salt, pepper, rosemary, thyme, onion powder, paprika, and butter into a paste.
Season the roast
Rub the mixture all over the prime rib, covering every side well.
Preheat oven
Heat oven to 500°F (260°C).
Roast at high heat
Place the roast fat-side up in a roasting pan and cook for 20 minutes.
Lower temperature
Reduce oven to 325°F (160°C) and continue roasting for about:
Rare: 10–12 min per pound
Medium rare: 13–15 min per pound
Medium: 16–18 min per pound
Rest the meat
Remove from oven, cover loosely with foil, and let rest for 20–30 minutes before slicing.
Serve
Slice thick and serve with mashed potatoes, roasted vegetables, or au jus.
