1 cup (125g) all-purpose flour
2 large eggs
1 ½ cups (360 ml) milk
2 tbsp melted butter (plus extra for the pan)
1 tbsp sugar (optional, for sweet crepes)
¼ tsp salt
1 tsp vanilla extract (optional, for sweet crepes)

Make the batter
In a bowl, whisk together the flour and eggs. Gradually add the milk while whisking to avoid lumps.
Add flavor & richness
Stir in melted butter, sugar (if using), salt, and vanilla. Mix until smooth.
Rest the batter
Let it sit for 15–30 minutes (this helps make the crepes tender).
Cook the crepes
Heat a non-stick pan over medium heat and lightly butter it.
Pour about ¼ cup batter into the pan.
Tilt the pan in a circular motion to spread it thinly.
Cook for 1–2 minutes until edges lift slightly, then flip.
Cook another 30–60 seconds.
Repeat
Stack cooked crepes on a plate and cover lightly to keep warm.
