🍲 Cozy Homemade Chicken Soup
Ingredients:
1 whole chicken (or 4–5 chicken thighs)
1 onion, chopped
3 carrots, sliced
2 celery stalks, sliced
3 cloves garlic, minced
1–2 potatoes (optional), diced
1 handful fresh parsley (or 1 tsp dried)
1 tsp salt (adjust to taste)
½ tsp black pepper
1 tsp turmeric (optional, great for immunity)
Juice of ½ lemon (optional, for brightness)
1.5–2 liters water
Instructions:
Boil the chicken
Place the chicken in a large pot, cover with water, and bring to a boil. Skim off any foam.
Add vegetables & seasoning
Add onion, carrots, celery, garlic, potatoes, salt, pepper, and turmeric.
Simmer gently
Lower the heat and let it simmer for about 45–60 minutes until the chicken is tender.
Shred the chicken
Remove the chicken, shred the meat, and return it to the pot. Discard bones.
Finish it off
Add parsley and a squeeze of lemon juice. Taste and adjust seasoning.

Add a handful of noodles or rice if you want it more filling
Garlic + turmeric + lemon = great combo when you’re under the weather
