Slow Cooker Pineapple Pork
Ingredients
1.5–2 lbs pork shoulder or pork loin, cut into chunks
1 can (about 20 oz) pineapple chunks, with juice
1 onion, sliced
3 cloves garlic, minced
1/2 cup soy sauce
1/4 cup brown sugar
2 tbsp ketchup
1 tbsp cornstarch + 2 tbsp water (optional, for thickening)
Salt and black pepper to taste
Instructions
Place the pork in the slow cooker.
Add pineapple chunks with the juice, onion, and garlic.
In a bowl, mix soy sauce, brown sugar, and ketchup. Pour over the pork.
Cover and cook:
Low: 6–8 hours
High: 3–4 hours
Once the pork is tender, shred slightly or leave in chunks.
For a thicker sauce, mix cornstarch with water and stir into the slow cooker during the last 15 minutes of cooking.
