Golden and crispy on the outside, creamy and sweet inside — this easy breakfast feels like dessert but fits perfectly into a low-carb morning.
Ingredients
1 large low-carb tortilla
2 oz cream cheese, softened
1 egg
2 tbsp shredded mozzarella cheese
2–3 tbsp fresh blueberries
1 tsp butter
1/2 tsp vanilla extract
1/2 tsp cinnamon
Optional: keto sweetener to taste
Instructions
In a small bowl, mix:
cream cheese
egg
vanilla
cinnamon
sweetener (if using)
Heat a nonstick skillet over medium-low heat and melt the butter.
Place the tortilla in the skillet. Spread the cream cheese mixture over half of it.
Sprinkle mozzarella cheese and blueberries on top.
Fold the tortilla over like a quesadilla.
Cook for about 2–3 minutes per side until golden brown and crispy.
Let cool slightly, then slice and serve.
