Creamy Garlic Butter Chicken & Rice
Ingredients
2 chicken breasts (or 4 thighs)
1 cup rice
2 cups chicken broth
3 cloves garlic, minced
2 tbsp butter
1 small onion, diced
1/2 cup heavy cream
1/2 cup grated parmesan cheese
Salt and black pepper
Optional: parsley for garnish
Instructions
Season chicken with salt and pepper.
In a large skillet, melt butter over medium heat.
Sear chicken 4–5 minutes per side until golden. Remove and set aside.
In the same pan, cook onion and garlic until soft and fragrant.
Stir in uncooked rice and toast for 1 minute.
Pour in chicken broth and bring to a simmer.
Return chicken to the skillet, cover, and cook 18–20 minutes until rice is tender.
Stir in heavy cream and parmesan cheese.
Simmer 2–3 more minutes until creamy and rich.
Garnish with parsley and serve hot.
