Crispy Breadcrumb Tomato Bake
A crunchy, cheesy tomato dish with buttery breadcrumbs and lots of flavor.
Ingredients
4 ripe tomatoes, sliced
1 cup breadcrumbs (panko works great)
2 tbsp olive oil or melted butter
2 cloves garlic, minced
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp Italian seasoning
Salt to taste
1/2 cup grated Parmesan or mozzarella
Fresh parsley or basil for garnish
Instructions
Preheat oven to 200°C (400°F).
Lightly grease a baking dish.
Arrange tomato slices in the dish and sprinkle lightly with salt.
In a bowl, mix breadcrumbs, garlic, pepper, paprika, Italian seasoning, olive oil, and cheese.
Spread the crunchy breadcrumb mixture over the tomatoes.
Bake for 20–25 minutes until golden and crispy on top.
Garnish with fresh herbs and serve warm.
Optional Twist
Add chili flakes for heat 🔥
Mix in cooked bacon bits
Drizzle with balsamic glaze before serving
Great as a side dish, appetizer, or served with grilled chicken or pasta.
