Creamy Chicken & Rice Casserole
A cozy, easy dinner that’s creamy, cheesy, and perfect for picky eaters or anyone with a small appetite.
Ingredients
2 cups cooked chicken, shredded or diced
1 cup uncooked white rice
2 cups chicken broth
1 can cream of chicken soup
1 cup sour cream
1 ½ cups shredded cheddar cheese
1 small onion, finely diced
1 teaspoon garlic powder
½ teaspoon paprika
Salt and black pepper to taste
2 tablespoons butter
Optional: chopped parsley for garnish
Instructions
Preheat oven to 180°C (350°F). Grease a 9×13-inch baking dish.
In a large bowl, mix together cream of chicken soup, sour cream, broth, garlic powder, paprika, salt, and pepper.
Stir in uncooked rice, onion, chicken, and 1 cup of the cheese.
Pour mixture into the prepared baking dish and spread evenly.
Cover tightly with foil and bake for 50–60 minutes, or until the rice is tender.
Remove foil, sprinkle remaining cheese on top, and bake uncovered for another 10 minutes until melted and bubbly.
Let rest 5 minutes before serving. Garnish with parsley if desired.
