No-Bake Blueberry Cheesecake Dessert
Ingredients
Crust
2 cups graham cracker crumbs
1/2 cup melted butter
2 tbsp sugar
Cheesecake Layer
2 packages (8 oz each) cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
1 tub whipped topping (like Cool Whip), thawed
Blueberry Topping
3 cups blueberries (fresh or frozen)
1/3 cup sugar
2 tbsp lemon juice
2 tbsp cornstarch
1/4 cup water
Instructions
- Make the Crust
Mix graham cracker crumbs, sugar, and melted butter.
Press firmly into the bottom of a 9×13-inch dish.
Chill in the fridge while making the filling. - Make the Cheesecake Filling
Beat cream cheese until smooth.
Add powdered sugar and vanilla.
Fold in whipped topping gently.
Spread evenly over the crust. - Make the Blueberry Topping
Add blueberries, sugar, and lemon juice to a saucepan.
Cook over medium heat until berries start bursting.
Mix cornstarch with water, then stir into berries.
Cook 2–3 minutes until thickened.
Let cool completely. - Assemble
Spoon cooled blueberry topping over cheesecake layer.
Refrigerate at least 4 hours (overnight is best). - Serve
Slice chilled and enjoy!
Optional: garnish with extra blueberries or whipped cream.
