Slow Cooker Onion Beef Roast
This looks like a super tender slow-cooker chuck roast with rich onion gravy. Here’s an easy version you can make:
Ingredients
3–4 lb beef chuck roast
2 large onions, sliced
1 packet onion soup mix
1 cup beef broth
2 tbsp Worcestershire sauce
2 tbsp brown sugar
2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
Salt & pepper
1 tbsp oil
Instructions
Season & sear
Pat roast dry and season with salt and pepper. Heat oil in a skillet and sear roast 3–4 minutes per side until browned.
Add to slow cooker
Place sliced onions in the bottom of the slow cooker. Put roast on top.
Mix sauce
In a bowl, combine:
onion soup mix
beef broth
Worcestershire sauce
brown sugar
Pour over the roast.
Cook
LOW for 8–10 hours
or
HIGH for 5–6 hours
The beef should fall apart easily with a fork.
Optional gravy
Remove roast. Mix cornstarch and water, stir into slow cooker juices, and cook 10–15 minutes until thickened.
