Tangy Addictive Cucumber Salad
Fresh, crunchy, sweet, salty, and just spicy enough — this is the kind of salad people keep eating straight from the bowl.
Ingredients
4 mini cucumbers (or 2 large cucumbers), sliced thin
1/4 small red onion, thinly sliced
1 tbsp soy sauce
1 tbsp rice vinegar or white vinegar
1 tsp sesame oil
1 tsp chili crisp or red pepper flakes
1 tsp sugar or honey
1 clove garlic, minced
1 tsp sesame seeds
Optional: chopped cilantro or green onions
Instructions
Slice cucumbers thin and place in a bowl.
Add the red onion and garlic.
In a small cup, mix soy sauce, vinegar, sesame oil, chili crisp, and sugar.
Pour over the cucumbers and toss well.
Sprinkle with sesame seeds and chill for 10–15 minutes before serving.
