Classic Family Chicken & Rice Casserole
Ingredients
2 cups cooked chicken, shredded or diced
1 cup uncooked white rice
1 can cream of chicken soup
1 can cream of mushroom soup
2 cups chicken broth
1 cup milk
1 small onion, chopped
1 cup shredded cheddar cheese
Salt and pepper to taste
Optional: paprika or crushed buttery crackers on top
Instructions
Preheat oven to 350°F (175°C).
Grease a 9×13-inch baking dish.
In a large bowl, mix:
uncooked rice
soups
chicken broth
milk
onion
chicken
half the cheese
Season with salt and pepper.
Pour into baking dish and cover tightly with foil.
Bake for 1 hour.
Remove foil, sprinkle remaining cheese on top, and bake another 10–15 minutes until bubbly and golden.
Optional: sprinkle paprika or crushed crackers on top before serving.
Tips
Add peas or broccoli for extra veggies.
Rotisserie chicken works great.
Tastes even better the next day.
