Slow Cooker Creamy Chicken & Rice
This cozy slow cooker dish is one of those easy “dump and go” comfort meals — creamy, hearty, and perfect for cold weather.
Ingredients
1 cup uncooked long-grain white rice
2 cups chicken broth
1 can cream of chicken soup
1 cup milk
1 packet onion soup mix
2 boneless chicken breasts (or thighs)
1 cup frozen mixed vegetables (optional)
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Spray the slow cooker lightly with cooking spray.
Pour the uncooked rice into the bottom.
In a bowl, whisk together:
chicken broth
cream of chicken soup
milk
onion soup mix
Pour the mixture over the rice.
Place the raw chicken on top.
Add vegetables if using.
Cover and cook:
Low: 4–5 hours
High: 2½–3 hours
Once the chicken is tender, shred it with two forks and stir everything together.
Season with salt and pepper and garnish with parsley.
