Frozen Blueberry Greek Yogurt Clusters
Ingredients
2 cups fresh blueberries
1 cup plain or vanilla Greek yogurt
2–3 tablespoons honey or maple syrup
1 teaspoon vanilla extract (optional)
1 cup melted dark or milk chocolate
1 tablespoon coconut oil (optional, helps chocolate melt smoothly)
Instructions
Line a tray or plate with parchment paper.
In a bowl, mix the Greek yogurt, honey, and vanilla extract.
Fold in the blueberries until fully coated.
Scoop small clusters onto the lined tray using a spoon.
Freeze for 1–2 hours, or until solid.
Melt the chocolate with coconut oil in the microwave in 20-second bursts, stirring each time.
Dip or drizzle the frozen clusters with chocolate.
Return to the freezer for 10–15 minutes until the chocolate hardens.
